Has anyone seen this lovely book by Sue Lawrence (from STVs The Hour?)

In it, she talks to lots of famous Scots about the food they enjoyed as children growing up in Scotland - everyone from Elaine C.Smith, Andrew Marr, Ally McCoist, Billy McNeill, Lorraine Kelly, Kirsty Wark, Gordon Ramsay, Barbara Dickson, Ewan McGregor...etc

The recipes include Cullen Skink, Cloutie Dumpling, Tattie Scones, Coffee Buns, Mince & Tatties (of course!)

wi Christmas coming ,here is a wee recipe for a quick dumpling made in the microwave , aye a like the real thing but this is good and handy if your in a hurry.
ingredients,
half a pint of water,1 cup of sugar, 2 eggs, 1lb sultanas , 1lb mixed fruit,tablespoon of ground cinnamon,1 tablespoon of mixed spice,1 teaspoon of bic of soda, 8oz of plain flour, 8oz of margerine, 1 tablespoon of treacle (optional), fit the bowl with the cling film leave the film over lapping do not cover
Put all the water, sugar, margerine, fruit,cinnamon, and spices, bring to boil in pan let simmer for 1 minute,while doing this prepare the flour and mix it with the bicarb in an other bowl, beat the eggs in a tumbler , when the mix has simmered , add the treacle to taste, then add the flour mix and the eggs mix well,when thouroughly mixed put into bowl ,DO NOT COVER WITH THE FILM leave it overlapping put it into microwwave ,normally 800 ,if higher adjust to suit,full power for 9 mins, leave in oven to cool then eat.

thanks for this delicious recipe I made the dumpling for xmas and was pleased with the result so very moist biggrin.gif
